Sugar has a dirty secret. You don’t actually taste most of it. 

But Douxmatok’s patent (US20210345638A1) may change that.

You see, when you take a bite of cake, the sugar crystals dissolve in the saliva and seep through the mucus layer to hit the sweet taste receptors of your tongue. 

But only a fraction of them ever touch your taste buds. The rest? You just swallow them.

This increases the requirement of sugar in our food. 

Douxmatok’s technology involves real sugar, but it is structured differently. To deliver sugar more efficiently to taste receptors, they use silica as a carrier. 

This process dissolves the sugar more quickly in the saliva, leading to a higher concentration of sugar around the sweet taste receptors. As a result, our brain perceives the food as sweeter.

And since this is real sugar, we get the same sensation of consuming sucrose, and not the off-after taste commonly associated with artificial sweeteners.

Besides Douxmatok’s structurally altered sugar, research is underway on various other sweeteners. And there’s a sweetener Coca-cola and Pepsi have been rushing to patent after Aspartame has fallen out of favor,

I also found the name of the company Douxmatok to be really intriguing! 

It is made up of Doux- which is sweet in French and Matok- which is sweet in Hebrew. Du also means double in Hebrew. 

So their name translates to “sweet sweet” or “double sweet”. Kind of apt for their tech, don’t you think?
